One fine day all of a sudden, my pressure cooked rice became too gooey to be eaten. Since it was a new brand of rice, I had unknowingly messed up with the water proportion. It was Saturday noon and just the two of us. Too hungry after the morning chores, both of us drank the over cooked-almost-liquid rice concoction with sambar.
Obviously we did not take the second helpings of the rice. But me being me, I could not see the rice going down the drain. I decided to do something with it.
I am not sure if there is some name to this recipe. This is more like an experiment which became a success.
Ingredients
2 cups of the liquid rice
1 medium size block of jaggery
4 cups of milk
2 spoons of ghee
A pinch of cardamom
A handful of cashews
Method
- Take a wide pan and boil milk in it.
- While the milk is getting boiled, heat jaggery in another vessel. Once it gets completely melted, strain it for impurities. You should be left with a clear liquid jaggery.
- Once milk is boiled, add the rice and keep stirring for about 5 minutes on low flame.
- Add the jaggery and keep stirring for 5 minutes.
- Add a pinch of cardamom and take it off the stove.
- Adjust the sweet level here, if you want to be sweeter, add more jaggery.
- Like we do the daal tadka, do a tadka of ghee with some cashews.
And what do you see?
A kheer like stuff waiting to be polished off.
Feel good about yourself that you did not waste the rice and dive in immediately.
P.SΒ I think this can work with left over rice too π Do let me know if you try it.
I make kheer a lot of times with left over rice and it turns out just fine. Liked the idea of adding jaggery. π

Jaggery tastes better than sugar in some dishes, it being more healthy than sugar I look to include it wherever possible π

C’mon Visha, making rice isn’t an easy task and 99% screw them when trying a new brand. Though I have never been stuck in it cause I cleverly cook rice in a pot and never in a pressure cooker so the minute the rice are almost done (not 100% around 90%) I drain off the excess water and close lid to let the rice cook in steam.
So I cheat.

It takes 2 or maximum 3 times for me to get the ratio correct for any new rice.

It doesn’t take long for I soak rice for sometime and then add them to a pot of boiling water so in short that takes around 10-15 minutes of boiling before the rice are done.

Hmm..10-15 min is the same time as pressure cooking. I like making basmati like that…in a pot π
OK , now I am going to make extra rice and obviously they will be left over.. then try this one out he he he he π
I doubt if the extra rice will be left over if you attack your dish in full hunger π π

When I was a kid, mom used to give me hot leftover rice mixed with Ghee and sugar. It tastes yummy. You can try that out as well. π
Talking about recycling, I like doing that with eggs. While making omelettes I experiment by adding the leftovers from the previous day like chickpeas, rajma, paneer pieces, capsicum, nuggets etc. They always come out great (as told by the family). π

I use a pot and so usually can adjust on and off. Usually rice doesn’t becoem a disaster – but this recipe makes me want to mess up with my rice and try it!

liked ur idea of recycling the poor overcooked rice threat….actually i did the same a minute back….n so i ws browsing to make gud use of my overcooked rice n all of a sudden i saw ur post…it looks gud….but visha ur recipee is sweet recipee…i want a normal lunch recipee like turning the overcooked rice into dahi chawal,,by adding curd and salt n other spices to it….someone try this also…meetha k saath kuch teekha hojaaye ..

Dahi chawal sounds very good. I think a tadka of cumin, mustard, red chillies, ginger and curry leaves alongwith some salt should be good. We do that anyways for a normal curd rice.
